These are my go-to cozy cookies — soft in the middle, lightly crisp on the edges, loaded with melty milk chocolate chips, and finished with a sprinkle of sea salt for that sweet-meets-salty magic. The secret? A little cornstarch to keep them soft, and just a dash of cinnamon that makes them taste like warm comfort in cookie form. Trust me: when you pull them out, they might look jiggly, but don’t panic — that’s how you know they’re perfect.
Recipe
Prep:
10 minutes
Chill (opt):
30 minutes
Bake:
8-10 minutes
Servings:
~18 cookies
Ingredients
1/2 cup (1 stick) unsalted butter, softened
1/4 cup + 2 tbsp white sugar
1/2 cup brown sugar
1 egg
1 tsp vanilla extract
1 1/2 cups all-purpose flour
1 tsp baking soda
1 tsp cornstarch
1 tsp salt
1/4 tsp ground cinnamon
1 – 1 1/2 cups milk chocolate chips
Flaky sea salt, for finishing
Instructions
1. Cream it: Mix 1/2 cup of softened butter, 1/4 cup and 2 tbsp of white sugar, and 1/2 cup of brown sugar until smooth. Add the 1 egg + 1 tsp vanilla and beat until fluffy.
2. Dry mix: In another bowl, whisk 1 1/2 cups of flour, 1 tsp of baking soda, 1 tsp of cornstarch, 1 tsp of salt, and 1/4 tsp of cinnamon.
3. Combine: Add dry ingredients to wet, mixing just until the flour disappears. (No overmixing!)
4. Chocolate overload: Fold in as many milk chocolate chips as your heart says yes to. (I like 1 1/2 cups of milk chocolate chips)
5. Scoop + bake: Drop spoonfuls onto a lined baking sheet. Bake at 350°F for 8–10 minutes on the top rack.
6. Perfect timing: Pull when edges are just golden and the centers look jiggly. They’ll set as they cool.
7. Finish: Sprinkle with flaky sea salt right away.
8. Enjoy: Let them cool slightly (if you can wait), then dig into warm, gooey goodness.
Sam’s Notes
Trust the cookie → slightly underbaked is the secret to gooey perfection.
Swap cinnamon for pumpkin spice in fall for cozy vibes.
Chill the dough overnight if you want thicker, chewier cookies. • These make the best ice cream sandwich cookies (highly recommend).
