Savory & Simple Rosemary Steak Marinade

Sometimes the best recipes are the simplest, and this Steak Marinade proves it. With a splash of tang, a hint of sweetness, and a sprig of fresh rosemary, it transforms everyday steaks into something juicy, flavorful, and downright irresistible. Plus, it all comes together in one ziplock bag — no extra dishes, no fuss, just bold flavor made simple.

Recipe

Prep:

10 minutes

Marinate:

6 hours

Cook Time:

12 minutes

Servings:

2 Steaks

Ingredients

  • ¾ cup oil (olive oil preferred, but vegetable oil works too — that’s what I used in the photos!)
  • ⅓ cup soy sauce (about 5 tbsp)
  • 3 tbsp vinegar (apple cider or red wine vinegar both work)
  • 2 tbsp Dijon mustard
  • 2 tbsp honey or brown sugar (optional, for a touch of sweetness)
  • 4 cloves garlic, minced (or 2 tsp garlic powder)
  • 2 tsp paprika (regular or smoked for more flavor)
  • 1 ½ tsp salt (adjust to taste, since soy sauce adds salt too)
  • 1 tsp black pepper
  • 1–2 sprigs fresh rosemary (or 1 tsp dried rosemary)

Instructions

  1. Place both steaks in a gallon-size ziplock bag, set inside a bowl (for stability and spill prevention).
  2. Add all marinade ingredients directly into the bag.
  3. Seal the bag, then gently massage to make sure steaks are coated all over.
  4. Refrigerate for 6 hours.
  5. Remove steaks from the fridge at least 30 minutes before cooking to bring them to room temperature.
  6. Cook to your liking — grill or pan-sear over medium-high heat (about 6–8 minutes per side for medium).
  7. Let rest for 5 minutes before slicing.

Sam’s Pro Tip

I hate washing oily dishes, so I skip mixing bowls completely — I just throw everything straight into the ziplock bag with the steaks. Less mess, more flavor!
