Ingredients

Graham Cracker Crust

  • 1½ cups graham cracker crumbs (about 10 full crackers)
  • ⅓ cup granulated sugar
  • 6 tbsp unsalted butter, melted

French Silk Filling

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • ¾ cup semi-sweet chocolate chips
  • 1¼ tsp espresso powder or instant coffee
  • 2 tsp vanilla extract
  • Pinch of salt
  • 4 large eggs (use pasteurized if preferred)

Instructions

Graham Cracker Crust

  1. Preheat oven to 350°F.
  2. In a medium bowl, 1½ cups graham cracker crumbs and ⅓ cup granulated sugar
  3. Stir in 6 tbsp melted, unsalted butter until it feels like wet sand.
  4. Press the mixture firmly into the bottom and up the sides of a 9-inch pie dish.
  5. Bake for 10 minutes, then let cool slightly before filling

French Silk Filling

  1. Melt the chocolate: In a small saucepan over low heat, melt ¾ cup semi-sweet chocolate chips with 1¼ teaspoons espresso powder. Stir constantly until smooth and glossy — about 2–3 minutes. Remove from heat and let cool until lukewarm.
  2. Whip the base: In a large mixing bowl, beat 1 cup (2 sticks) unsalted butter with 1 cup granulated sugar on medium speed for 3–5 minutes, or until pale and fluffy.
  3. Mix it all together: Add the chocolate mixture, 2 teaspoons vanilla extract, and a pinch of salt. Beat until smooth and fully incorporated.
  4. Add the eggs: Beat in 4 large eggs, one at a time — mixing for 5 minutes per egg. This step gives the filling its silky, mousse-like texture.
  5. Assemble: Spoon the filling into your cooled graham cracker crust and smooth the top.
  6. Chill: Refrigerate for at least 6 hours, or overnight for the dreamiest texture.
